4 ripe peaches, sliced

1 cup quinoa, rinsed

2 cups vegetable broth (or water)

1 cup chickpeas, drained and rinsed

1 cup spinach leaves, chopped

1/2 cup feta cheese, crumbled

1/4 cup walnuts, toasted and chopped

1 avocado, sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey (or maple syrup for a vegan option)

Salt and pepper, to taste

Fresh basil, for garnish (optional)

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa has absorbed all the liquid. Remove from heat and fluff with a fork.

    Prepare the Peaches: While the quinoa is cooking, slice the peaches in half, remove the pits, and slice them into wedges. If desired, grill the peach wedges for about 2-3 minutes on each side to enhance their sweetness and add a smoky flavor.

      Sauté the Spinach: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes, until wilted. Season with salt and pepper to taste.

        Mix the Dressing: In a small bowl, whisk together the remaining tablespoon of olive oil, balsamic vinegar, and honey (or maple syrup). Set aside.

          Assemble the Bowls: In four bowls, start with a base of cooked quinoa. Layer on chickpeas, sautéed spinach, grilled peach slices, and avocado. Sprinkle each bowl with crumbled feta cheese and chopped walnuts.
