Ingredients

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

4 cups low-sodium chicken broth

2 cups water

1 pound boneless, skinless chicken breasts

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

4 ounces egg noodles (or your favorite pasta)

2 large eggs

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until softened. Stir in the minced garlic, sliced carrots, and celery, cooking for an additional 5 minutes until the vegetables start to soften.

Add Liquid and Chicken: Pour in the chicken broth and water, then add the chicken breasts, thyme, rosemary, bay leaf, and a pinch of salt and pepper. Bring the soup to a gentle boil, then reduce the heat and let it simmer for about 20 minutes, until the chicken is cooked through.

Cook the Noodles: While the chicken is cooking, prepare the egg noodles in a separate pot according to package instructions. Drain and set aside.

Make the Egg Ribbons: In a small bowl, beat the eggs and add the fresh lemon juice. Take a fork and slowly drizzle the beaten egg into the simmering soup, stirring gently to create silky ribbons.

Shred the Chicken: Once the chicken is fully cooked, remove it from the pot and let it cool slightly. Shred the chicken into bite-sized pieces using two forks and return it to the soup.

Combine and Season: Add the cooked egg noodles to the soup and stir well. Taste and adjust the seasoning with additional salt and pepper if needed. Remove the bay leaf before serving.

Garnish and Serve: Ladle the soup into bowls, garnishing each serving with fresh parsley. Enjoy your hearty chicken noodle soup with silky egg ribbons warm and comforting!
