4 medium zucchinis, spiralized into noodles

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

1 red bell pepper, chopped

1 cup cherry tomatoes, halved

4 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

2 cups fresh baby spinach

Fresh basil leaves for garnish

Heat the Oil: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for 3-4 minutes until translucent.
