2 cups rolled oats

1 cup whole wheat flour

1/2 cup almond butter (or any nut butter of your choice)

1/2 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

2 cups fresh or frozen strawberries, chopped

1 tablespoon lemon juice

1 teaspoon cinnamon

Optional: 1/4 cup chopped nuts (walnuts or almonds) for added crunch

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Prepare the Strawberry Filling: In a medium bowl, combine the chopped strawberries, lemon juice, and cinnamon. If using frozen strawberries, allow them to thaw beforehand. Set aside to let the flavors meld.

      Make the Oat Mixture: In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, and salt. Mix well.

        Combine Wet Ingredients: In another bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth.

          Combine Everything: Pour the wet mixture into the dry oat mixture and stir until combined. If desired, fold in the chopped nuts for added texture.

            Assemble the Bars: Half of the oat mixture will form the base. Press half of the mixture firmly into the bottom of the prepared baking dish. Spread the strawberry filling evenly over the base, then crumble the remaining oat mixture on top, pressing down gently to secure it.

              Bake the Bars: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the strawberries are bubbling.

                Cool and Cut: Once baked, remove from the oven and let it cool completely in the baking dish on a wire rack. Once cool, lift the bars out using the parchment overhang, and cut them into squares or rectangles.

                  Storage: Store the bars in an airtight container at room temperature for up to 4 days, or refrigerate for a week for longer freshness.
