3 medium zucchinis, sliced into half-moons

3 tablespoons extra virgin olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

Salt and pepper to taste

1 tablespoon fresh lemon juice

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Zucchini: Wash and trim the ends of the zucchinis. Slice them into half-moons about 1/4 inch thick for even cooking.

    Heat the Oil: In a large skillet, heat the extra virgin olive oil over medium heat.

      Sauté the Garlic: Once the oil is shimmering (but not smoking), add the minced garlic. Sauté for about 30 seconds until fragrant, stirring frequently to prevent burning.

        Cook the Zucchini: Add the sliced zucchini to the skillet. Stir well to coat the zucchini with the garlic-infused oil. Sauté for 5-7 minutes, until the zucchini is tender but still crisp, stirring occasionally.

          Season the Dish: Sprinkle in the dried oregano, dried thyme, red pepper flakes (if using), salt, and pepper. Stir well to evenly distribute the spices. Cook for an additional 2-3 minutes.

            Finish with Lemon: Remove the skillet from heat and drizzle the fresh lemon juice over the sautéed zucchini. Toss gently to combine.

              Garnish and Serve: Transfer the sautéed zucchini to a serving dish, sprinkle with fresh parsley, and serve warm as a side dish or a light main dish.
