Ingredients

2 cups rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 cup mashed ripe banana (about 1 large banana)

1/2 cup unsweetened applesauce

1/2 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp salt

1/3 cup chopped nuts (e.g., walnuts or pecans)

1/3 cup dried fruit (e.g., cranberries, apricots, or raisins)

1/4 cup dark chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, allowing some overhang for easy removal later.

Mix Wet Ingredients: In a large mixing bowl, combine the almond butter, honey or maple syrup, mashed banana, applesauce, and vanilla extract. Stir until smooth and fully combined.

Add Dry Ingredients: To the wet mixture, add the rolled oats, cinnamon, and salt. Mix well until the oats are evenly coated.

Fold in Extras: Gently fold in the chopped nuts, dried fruit, and chocolate chips (if using) until evenly distributed throughout the mixture.

Transfer to Pan: Pour the mixture into the prepared baking pan and press it firmly into an even layer using a spatula or your hands.

Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are lightly golden and the center is set.

Cool and Cut: Remove the bars from the oven and allow them to cool in the pan for about 10 minutes. Once slightly cooled, lift the bars out using the parchment overhang and place them on a wire rack to cool completely. Once fully cooled, cut them into squares or rectangles.

Store: Enjoy immediately or store in an airtight container for up to a week. They can also be frozen for longer storage; simply wrap each bar individually in plastic wrap before freezing.
