Healthy Chicken Taco Casserole

1 lb boneless, skinless chicken breast, cooked and shredded

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup diced tomatoes (canned or fresh)

1 cup onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup Greek yogurt (as a sour cream alternative)

1 cup shredded low-fat cheese (Cheddar or Mexican blend)

8 whole wheat tortilla wraps, cut into quarters

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: If not already cooked, boil or grill the chicken breasts until fully cooked. Allow to cool, then shred the chicken using two forks.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent, approximately 4-5 minutes.

        Combine Ingredients: In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, sautéed onions and garlic, cumin, chili powder, paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined.

          Layer the Casserole: In a greased 9x13-inch baking dish, start layering the casserole. Place a layer of the quartered tortilla wraps on the bottom. Follow with half of the chicken mixture, then spread half of the Greek yogurt and half of the shredded cheese over it. Repeat the layers with another set of tortillas, the remaining chicken mixture, yogurt, and cheese on top.

            Bake the Casserole: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

              Garnish and Serve: Once baked, remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh cilantro and serve with lime wedges on the side for an extra zest.
