1 cup rolled oats

1 cup almond flour

1/2 cup vanilla protein powder (whey or plant-based)

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/4 cup unsweetened almond milk

2 large eggs

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1 cup fresh or frozen blueberries

Optional: 1/4 cup walnuts or pecans, chopped

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the rolled oats, almond flour, protein powder, baking powder, baking soda, salt, and cinnamon until well combined.

      Combine Wet Ingredients: In another bowl, mix the honey (or maple syrup), applesauce, almond milk, and eggs. Stir until the mixture is smooth and homogenous.

        Combine Wet and Dry Ingredients: Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined, being careful not to overmix.

          Fold in Blueberries: Gently fold in the blueberries (and nuts, if using) into the batter. Make sure they are evenly distributed throughout the mixture.

            Fill Muffin Tins: Divide the batter evenly among the muffin cups, filling each about 2/3 full to allow room for rising.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
