1/4 cup chia seeds

2 tablespoons maple syrup (or honey, for sweetness)

In a medium-sized mixing bowl, combine the almond milk, chia seeds, maple syrup, vanilla extract, and cinnamon (if using). Whisk until well blended.

    Let the mixture sit for about 5 minutes, then whisk again to prevent clumping of the chia seeds. This helps to evenly distribute the seeds in the liquid.

      Cover the bowl with plastic wrap or transfer the mixture into a jar with a lid, then refrigerate for at least 4 hours or overnight. The chia seeds will expand and gel, creating a pudding-like consistency.

        Once the chia pudding has thickened up, give it a good stir to break up any clumps.
