2 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking powder

1 tablespoon olive oil

3/4 cup warm water

1 cup roasted Hatch green chilies, chopped (or 1 can if fresh is unavailable)

1 cup shredded mozzarella cheese (or your preferred cheese)

1/2 cup crumbled feta cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cumin

Fresh cilantro, chopped (for garnish)

Sliced radishes (for garnish, optional)

Lime wedges (for serving)

Instructions
 

Prepare the Dough: In a large bowl, whisk together the flour, salt, and baking powder. Make a well in the center, then add the olive oil and warm water gradually. Mix until a dough forms.

    Knead: Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Wrap the dough in plastic wrap and let it rest for 30 minutes.

      Preheat the Oven: While the dough is resting, preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

        Roll Out the Dough: Divide the rested dough into four equal portions. Roll each portion into a flat circle, about 1/4 inch thick.

          Add Toppings: Place the rolled flatbreads on the prepared baking sheet. Sprinkle the garlic powder, onion powder, and cumin evenly over the dough. Top each flatbread with the chopped Hatch chilies, mozzarella cheese, and crumbled feta.

            Bake: Bake in the preheated oven for 8-10 minutes, or until the flatbreads are golden and the cheese is bubbling.

              Garnish: Remove from the oven and garnish with fresh cilantro and sliced radishes, if using.

                Serve: Slice into wedges and serve hot with lime wedges on the side for added zest.
