2 cups cooked shredded chicken

1 cup roasted Hatch green chiles, chopped

1 cup shredded Monterey Jack cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cumin

Salt and pepper to taste

12 small corn tortillas

1/4 cup vegetable oil for frying

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, chopped Hatch green chiles, shredded Monterey Jack cheese, cream cheese, garlic powder, onion powder, cumin, and season with salt and pepper. Mix until well combined.

    Soften the Tortillas: To make wrapping easier, lightly warm the corn tortillas in a skillet over low heat for about 15-20 seconds on each side until pliable. Alternatively, you can wrap them in a damp paper towel and microwave for 30 seconds.

      Assemble the Taquito Rolls: Take a tortilla, place about 2-3 tablespoons of the filling near one edge, and roll tightly. Firmly secure the roll and set it seam side down on a plate. Repeat with remaining tortillas and filling.

        Fry the Taquitos: In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully place a few taquito rolls seam side down into the oil, avoiding overcrowding the pan.
