Ingredients

1 can (16 oz) refrigerated flaky biscuit dough

1 cup shredded cheddar cheese

½ cup cooked breakfast sausage, crumbled (or diced bacon)

½ cup roasted Hatch green chiles, chopped

2 large eggs, beaten

1 tablespoon olive oil

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

Optional: Fresh cilantro for garnish

Optional: Salsa, for serving

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Prepare the Filling: In a medium mixing bowl, combine the cooked breakfast sausage (or bacon), shredded cheddar cheese, chopped Hatch green chiles, and beaten eggs. Season with garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly combined.

Prepare the Biscuit Dough: Open the can of flaky biscuit dough and separate the biscuits. Each biscuit will serve as a bomb for your filling.

Assemble the Bombs: Flatten each biscuit into a circle about ¼ inch thick. Spoon 2 tablespoons of the filling onto the center of each biscuit. Carefully fold the edges of the biscuit dough over the filling to create a pouch, pinching the seams together tightly to seal in the filling.

Bake the Bombs: Place the filled biscuit bombs seam-side down on the prepared baking sheet. Brush the tops lightly with olive oil for a golden finish (optional). Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and cooked through.

Cool and Serve: Remove from the oven and allow the biscuits to cool for a few minutes. Garnish with fresh cilantro if desired, and serve warm with salsa on the side for dipping.
