Ingredients

1 cup rolled oats

1 scoop vanilla protein powder (any brand of your choice)

1 tablespoon baking powder

1 teaspoon cinnamon

1/4 teaspoon salt

1 cup unsweetened almond milk (or any milk of your choice)

2 large eggs (or 1/2 cup unsweetened applesauce for a vegan version)

1 teaspoon vanilla extract

1 cup mixed berries (fresh or frozen, such as blueberries, raspberries, and diced strawberries)

Optional toppings: Greek yogurt, honey, or maple syrup

Instructions

Prep the Oats: In a blender or food processor, blend the rolled oats until they reach a fine flour consistency.

Mix Dry Ingredients: In a large mixing bowl, combine the oat flour, protein powder, baking powder, cinnamon, and salt. Whisk together until well mixed.

Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, eggs (or applesauce), and vanilla extract until fully combined.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; be careful not to overmix.

Fold in Berries: Gently fold in the mixed berries until evenly distributed throughout the batter.

Heat the Waffle Maker: Preheat your waffle iron according to the manufacturer's instructions.

Cook the Waffles: Pour an appropriate amount of batter onto the preheated waffle maker (about 1/2 cup, depending on the size of your waffle iron). Close the lid and cook according to the manufacturer's instructions until the waffles are golden brown and cooked through (about 4-5 minutes).

Serve: Carefully remove the waffles from the waffle iron and serve warm with optional toppings like Greek yogurt, a drizzle of honey, or pure maple syrup.
