1 lb ground turkey

2 tablespoons soy sauce (low-sodium recommended)

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

2 tablespoons vegetable oil

1 bell pepper, sliced (any color)

1 medium onion, sliced

2 cloves garlic, minced

1 cup broccoli florets

1 carrot, julienned

1 cup snap peas

1 teaspoon fresh ginger, minced

Salt and pepper to taste

2 green onions, chopped (for garnish)

Cooked rice or noodles (for serving)

Instructions
 

Prep the Ingredients: Start by washing and slicing the vegetables: bell pepper, onion, carrot, and broccoli. Mince the garlic and ginger, and set aside the ground turkey.

    Cook the Ground Turkey: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the ground turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat.

      Stir-Fry the Vegetables: In the same skillet, push the turkey to one side and add the remaining tablespoon of vegetable oil. Add the sliced onion, bell pepper, garlic, and ginger. Stir-fry for about 2-3 minutes until the vegetables begin to soften.

        Add the Remaining Vegetables: Add the broccoli florets, julienned carrot, and snap peas to the skillet. Stir everything together and cook for another 3-4 minutes, or until the vegetables are tender yet crisp.

          Season the Stir-Fry: Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir to combine, allowing the flavors to meld for about 2 minutes. Taste and adjust with salt and pepper as needed.
