3 medium zucchinis, sliced into 1/4-inch rounds

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

1/4 cup feta cheese, crumbled

Fresh basil leaves, for garnish

Prep the Zucchini: Preheat your grill or grill pan over medium-high heat. In a bowl, toss the zucchini slices with half of the olive oil, salt, and pepper until well-coated.

    Grill the Vegetables: Place the zucchini slices on the grill. Cook for 3-4 minutes on each side until you see grill marks and the zucchini is tender but still has some bite. Remove from heat and set aside.

      Grill the Bell Pepper and Onion: In the same grill pan, toss the diced red bell pepper and sliced red onion with the remaining olive oil, oregano, salt, and pepper. Grill for about 5-6 minutes, stirring occasionally, until slightly charred and softened.

        Combine Ingredients: In a large mixing bowl, combine the grilled zucchini, bell pepper, red onion, and cherry tomatoes. Drizzle with balsamic vinegar and gently toss everything together until evenly coated.

          Top with Feta: Sprinkle the crumbled feta cheese on top of the salad and gently incorporate it without breaking it down too much.
