2 medium zucchinis, sliced lengthwise into thin strips

1 cup feta cheese, crumbled

1 cup cherry tomatoes, halved

1/4 cup fresh basil, chopped

1/4 cup olives (green or black), pitted and sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

4 large whole-grain or spinach tortillas

Optional: Arugula or baby spinach for extra greens

Preheat the Grill: Start by preheating your grill to medium-high heat. If using a grill pan, you can heat it on the stovetop over medium heat.

    Prepare the Zucchinis: In a mixing bowl, toss the zucchini strips with olive oil, salt, and pepper until well-coated. This will enhance their flavor and help them grill nicely.

      Grill the Zucchinis: Place the zucchini strips on the hot grill and grill for about 2-3 minutes on each side, or until they are tender and have nice grill marks. Remove them from the grill and set aside.
