Ingredients

2 medium zucchinis, sliced into ½-inch rounds

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

8 ounces fresh mozzarella cheese, sliced into ½-inch rounds

2 large ripe tomatoes, sliced into ½-inch rounds

Fresh basil leaves (about 1 cup)

Balsamic glaze, for drizzling

Optional: Italian seasoning, for added flavor

Instructions

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C).

Prepare the Zucchini: In a large bowl, toss the zucchini rounds with olive oil, salt, pepper, and optional Italian seasoning, ensuring each piece is well-coated.

Grill the Zucchini: Place the zucchini rounds on the grill. Grill for about 4-5 minutes on each side, or until they have nice grill marks and are tender. Remove from the grill and set aside.

Assemble the Stacks: On a serving platter, layer the grilled zucchini, a slice of mozzarella cheese, and a tomato slice. Add a basil leaf on top of the tomato slice. Repeat the layering process until you have built stacks for each zucchini slice (typically 4-5 stacks per serving).

Drizzle with Balsamic Glaze: Once your stacks are assembled, lightly drizzle the balsamic glaze over the top of each stack for added flavor and presentation.

Serve and Enjoy: Serve your Grilled Zucchini Caprese Stacks warm or at room temperature as an appetizer or side dish. Enjoy the fresh, vibrant flavors!
