Ingredients

1 medium-sized seedless watermelon

1 cup heavy cream

1 cup coconut milk

3/4 cup granulated sugar

1 tsp vanilla extract

Juice of 1 lime

Pinch of salt

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Watermelon: Slice the watermelon into thick, even wedges (about 1 inch thick). You can cut away the rind if desired for ease of grilling.

Grill the Watermelon: Preheat your grill to medium-high heat. Place the watermelon wedges directly on the grill and cook for about 3-4 minutes on each side until grill marks form and it softens slightly. Remove from the grill and let cool.

Blend the Watermelon: Once the grilled watermelon is cool enough to handle, scoop the flesh away from the rind and place it in a blender or food processor. Blend until smooth. You should have about 2 cups of watermelon puree.

Mix the Ice Cream Base: In a mixing bowl, combine the heavy cream, coconut milk, granulated sugar, vanilla extract, lime juice, and a pinch of salt. Whisk until the sugar is fully dissolved.

Combine: Fold the watermelon puree into the cream mixture until well combined.

Chill the Mixture: Cover the mixture and place it in the refrigerator for at least 2 hours (or until it's thoroughly chilled).

Churn the Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions, usually around 20-25 minutes until it reaches a soft-serve consistency.

Freeze: Transfer the churned ice cream into an airtight container. Freeze for at least 4 hours or until firm.

Serve: Scoop the grilled watermelon ice cream into bowls or cones. Garnish with fresh mint leaves if desired. Enjoy your delightful summer treat!
