Grilled Vegetable Flatbread

2 large flatbreads or pita breads

1 medium zucchini, sliced into thin rounds

1 red bell pepper, cut into strips

1 yellow bell pepper, cut into strips

1 small red onion, sliced into rings

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup mozzarella cheese, shredded

Fresh basil leaves, for garnish

Balsamic glaze, for drizzling

Prepare the Vegetables: In a large bowl, combine the sliced zucchini, bell peppers, onion, and cherry tomatoes. Drizzle with olive oil, and sprinkle with Italian seasoning, salt, and pepper. Toss until the vegetables are evenly coated.

    Grill the Vegetables: Preheat your grill to medium-high heat. Place the marinated vegetables in a grill basket or directly on the grill grates. Grill for about 8-10 minutes, turning occasionally, until the vegetables are tender and have nice grill marks. Remove from heat and set aside.

      Heat the Flatbreads: While the vegetables are grilling, place the flatbreads on the grill for about 1-2 minutes on each side, until they are warm and have light grill marks. Alternatively, you can also use a skillet on the stovetop.

        Assemble the Flatbreads: Once the flatbreads are ready, remove them from the heat. Spread an even layer of grilled vegetables over each flatbread. Top with shredded mozzarella cheese.

          Melt the Cheese: Place the assembled flatbreads back on the grill (or in a preheated oven at 400°F) for another 2-3 minutes, or until the cheese is melted and bubbly.
