Ingredients

For the Grilled Tenderloin:

2 pounds beef tenderloin, trimmed

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

For the Creamy Dill Sauce:

1 cup sour cream

2 tablespoons mayonnaise

2 tablespoons fresh dill, chopped

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

1 garlic clove, minced

Salt and pepper to taste

Instructions

Marinate the Tenderloin:

In a small bowl, combine the olive oil, minced garlic, chopped rosemary, thyme, salt, and pepper. Rub the mixture all over the beef tenderloin, ensuring it's evenly coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.

      Prepare the Grill:

Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are glowing white and have a thin layer of ash.

          Make the Creamy Dill Sauce:

While the tenderloin marinates, prepare the sauce. In a mixing bowl, whisk together sour cream, mayonnaise, chopped dill, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Adjust the seasoning to your preference. Refrigerate until ready to serve.

              Grill the Tenderloin:

Remove the tenderloin from the refrigerator and let it sit at room temperature for about 20 minutes before grilling. Place the tenderloin on the hot grill, searing each side for 4-5 minutes to create a nice crust.

                  Cook to Desired Doneness:

Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130°F (54°C); medium, 140°F (60°C); and medium-well, 150°F (65°C). This should take approximately 15-20 minutes, depending on the thickness of the tenderloin.

                      Rest the Meat:

Once cooked to your liking, remove the tenderloin from the grill and let it rest for about 10 minutes. This allows the juices to redistribute throughout the meat.

                          Slice and Serve:

Slice the grilled tenderloin into thick medallions and serve with a generous dollop of the creamy dill sauce on the side. Garnish with fresh dill sprigs, if desired.
