Grilled Shrimp Street Tacos

For the Shrimp Marinade:

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

Juice of 2 limes

3 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

For the Tacos:

8 small corn tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

1/2 cup crumbled queso fresco

1/4 cup fresh cilantro leaves

Lime wedges (for serving)

Salsa or hot sauce (optional)

Instructions
 

Marinate the Shrimp: In a bowl, combine olive oil, lime juice, minced garlic, cumin, smoked paprika, chili powder, salt, and pepper. Add the shrimp and toss to coat evenly. Let it marinate in the refrigerator for at least 15-30 minutes.

    Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it on the stove over medium-high heat.

      Grill the Shrimp: Once the grill is hot, skewer the marinated shrimp on skewers (if using wooden skewers, soak them in water for 30 minutes before grilling). Grill the shrimp for about 2-3 minutes on each side, or until they are cooked through and pink with nice grill marks.

        Warm the Tortillas: While the shrimp is grilling, wrap the corn tortillas in aluminum foil and place them on the grill for about 2-3 minutes, until warmed.

          Assemble the Tacos: To assemble the tacos, place a few grilled shrimp on each tortilla. Top with shredded red cabbage, avocado slices, crumbled queso fresco, and fresh cilantro leaves.
