1 pound of Italian sausages (any variety, e.g., sweet, spicy, or turkey)

1 medium zucchini, sliced into half-moons

1 medium yellow squash, sliced into half-moons

1 red bell pepper, chopped into bite-sized pieces

1 yellow bell pepper, chopped into bite-sized pieces

1 cup grape or cherry tomatoes, halved

3 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons Italian seasoning

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Aluminum foil (enough for 4 packs)

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F).

    Prepare Ingredients: In a large mixing bowl, combine the zucchini, yellow squash, bell peppers, and cherry tomatoes. Drizzle with olive oil, then sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss until all the vegetables are evenly coated.

      Prep the Sausages: If using raw Italian sausages, either grill them whole or slice them into bite-sized pieces. This will allow for quicker cooking and more flavor absorption.

        Make Foil Packs: Tear off four large pieces of aluminum foil (about 12x18 inches each). Place an equal portion of the vegetable mixture in the center of each foil piece. Top each vegetable pile with sausages.

          Seal the Packs: Fold the foil over the vegetables and sausages to create a tight seal. Make sure to leave some space in the packets for steam to circulate, but ensure they are well sealed to prevent juices from leaking out.

            Grill the Packs: Place the foil packs on the preheated grill. Close the lid and grill for about 20-25 minutes, turning halfway through, or until the sausages are cooked through and the vegetables are tender.

              Serve: Carefully open each foil pack (watching out for hot steam) and garnish with fresh basil or parsley if desired. Serve directly from the foil packs or transfer to plates.
