Grilled Salmon with Pineapple Salsa

For the Grilled Salmon:

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper to taste

Lemon wedges for garnish

For the Pineapple Salsa:

1 cup fresh pineapple, finely diced

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Marinate the Salmon: In a mixing bowl, whisk together olive oil, soy sauce, honey, minced garlic, grated ginger, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

    Prepare the Pineapple Salsa: While the salmon marinates, combine the diced pineapple, red bell pepper, red onion, jalapeño, cilantro, and lime juice in a bowl. Season with salt to taste. Mix gently and set aside for flavors to meld.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C). If using a grill pan, place it on medium heat and lightly oil it.

        Grill the Salmon: Remove the salmon from the marinade and let any excess drip off. Place the salmon fillets skin-side down on the grill. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and easily flakes with a fork. The internal temperature should reach 145°F (63°C).

          Serve: Once grilled, remove the salmon from the grill and let it rest for a couple of minutes. Serve the salmon on plates with a generous scoop of pineapple salsa on top and lemon wedges on the side.
