Grilled Portobello Mushroom Burgers

4 large Portobello mushrooms, cleaned and stems removed

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

4 whole grain burger buns

4 slices of fresh mozzarella cheese

1 cup baby spinach

1 ripe avocado, sliced

1 large tomato, sliced

Optional: mayonnaise or aioli for spreading

Marinate the Mushrooms: In a shallow bowl, combine the balsamic vinegar, olive oil, minced garlic, oregano, thyme, salt, and pepper. Add the Portobello mushrooms to the marinade, ensuring they are fully coated. Allow them to marinate for at least 30 minutes or up to 2 hours in the refrigerator.

    Preheat the Grill: Heat your grill (or grill pan) over medium-high heat. If using a charcoal grill, ensure the coals are hot and ashy.

      Grill the Mushrooms: Remove the mushrooms from the marinade and shake off excess liquid. Place them on the grill, gill side down, and cook for about 5-7 minutes. Flip the mushrooms, add a slice of mozzarella cheese on top of each, and cook for another 5-7 minutes or until the cheese is melted and the mushrooms are tender.

        Toast the Buns: While the mushrooms finish grilling, slice the whole grain burger buns and toast them on the grill for 1-2 minutes until golden brown.

          Assemble the Burgers: Spread mayonnaise or aioli (if using) on the bottom half of each toasted bun. Place the grilled Portobello mushroom with melted cheese on top, followed by a handful of baby spinach, avocado slices, and tomato slices. Top with the other half of the bun.
