Grilled Pita Bread Pizza

4 whole wheat pita breads

1 cup marinara sauce or pizza sauce

1 ½ cups shredded mozzarella cheese

1 cup sliced bell peppers (mixed colors)

1 cup sliced cherry tomatoes

½ cup sliced black olives

¼ cup red onion, thinly sliced

1 teaspoon dried oregano

1 teaspoon garlic powder

½ teaspoon crushed red pepper flakes (optional)

Fresh basil leaves for garnish

Olive oil for brushing

Salt and pepper to taste

Prepare the Grill: Preheat your grill to medium-high heat (about 375°F/190°C). If you're using a charcoal grill, ensure the coals are glowing and covered with ash.

    Prepare Pita Base: Lightly brush each pita bread on one side with olive oil. This will give a nice crisp texture and prevent sticking.

      Grill the Pita: Place the pitas, oil-side down, on the grill grate. Cover and grill for about 2-3 minutes, or until they have grill marks and are slightly crispy. While they’re grilling, brush the tops with a little olive oil.

        Add Sauce and Toppings: Once the pita breads are grilled, remove them from the grill and flip them over. Spread a generous layer of marinara sauce on each pita. Sprinkle the shredded mozzarella evenly across the tops, followed by the sliced bell peppers, cherry tomatoes, black olives, and red onion. Season with oregano, garlic powder, salt, pepper, and red pepper flakes if desired.

          Return to the Grill: Carefully place the topped pita pizzas back on the grill. Cover and cook for an additional 5-7 minutes, or until the cheese is melted and bubbly, and the bottom of the pita is well-toasted.

            Garnish and Serve: Once the pizzas are done, remove them from the grill. Top with fresh basil leaves. Slice into wedges and serve immediately.
