Grilled Pineapple Black Bean Tacos

1 ripe pineapple, peeled, cored, and sliced into rings

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper, to taste

8 small corn tortillas

1 avocado, sliced

1 cup red cabbage, shredded

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: crumbled feta cheese or cotija cheese for topping

Instructions
 

Grill the Pineapple: Preheat the grill to medium-high heat. Place the pineapple rings on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the pineapple is caramelized. Remove from heat and chop into bite-sized pieces.

    Prepare the Black Beans: In a medium saucepan, heat olive oil over medium heat. Add the rinsed black beans, chili powder, cumin, salt, and pepper. Stir and cook for about 5-7 minutes until heated through.

      Warm the Tortillas: While the beans are heating, warm the corn tortillas on the grill for about 1 minute on each side or until they become slightly toasted and pliable.
