Ingredients

2 ripe peaches, halved and pitted

1 tablespoon olive oil

Salt, to taste

Freshly ground black pepper, to taste

4 slices of artisanal bread (like sourdough or ciabatta)

1 ball of burrata cheese (about 8 oz)

Fresh basil leaves, for garnish

Balsamic glaze, for drizzling

Optional: a sprinkle of red pepper flakes or honey, for added flavor

Instructions

Prepare the Peaches: Preheat your grill or grill pan over medium-high heat. Brush the cut sides of the peach halves with olive oil and season lightly with salt and pepper.

Grill the Peaches: Place the peaches cut-side down on the grill. Grill for about 3-4 minutes until grill marks appear and the peaches become tender. Remove from heat and let them cool slightly.

Toast the Bread: While the peaches are grilling, place the slices of artisanal bread on the grill or in a toaster. Grill for about 2-3 minutes per side until golden and slightly crisp.

Assemble the Toast: For each slice of grilled bread, place a portion of burrata cheese on top while the bread is still warm. Gently tear the burrata for a rustic look.

Add Grilled Peaches: Slice the grilled peaches into wedges and arrange them over the burrata. You can fan them out nicely or layer them, depending on your preference.

Garnish: Finish the toast with fresh basil leaves. Drizzle generously with balsamic glaze and, if desired, sprinkle with red pepper flakes for a hint of spice or drizzle with a touch of honey for sweetness.

Serve Immediately: Enjoy while the toast is warm and the burrata is creamy!
