Grilled Halloumi & Watermelon Salad

250g halloumi cheese, sliced into 1 cm thick slices

3 cups watermelon, cubed (seedless preferred)

2 cups arugula or mixed salad greens

1/4 cup fresh mint leaves, roughly chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

Salt and pepper, to taste

Lemon zest, for garnish (optional)

Toasted pine nuts, for garnish (optional)

Instructions
 

Prep the Grill: Preheat your grill or grill pan over medium heat.

    Prepare the Halloumi: Lightly brush both sides of the halloumi slices with a bit of olive oil to prevent sticking.

      Grill the Halloumi: Place the halloumi slices on the hot grill. Grill for about 2-3 minutes on each side, or until golden brown and slightly crispy. Remove from the grill and set aside.

        Prepare the Watermelon: While the halloumi is grilling, cube the watermelon into bite-sized pieces.

          Make the Salad Base: In a large bowl, add the arugula or mixed greens. Scatter the watermelon cubes over the greens.

            Add Fresh Herbs: Gently toss in the chopped mint leaves, ensuring they are evenly distributed throughout the salad.

              Dress the Salad: In a small bowl, whisk together the olive oil and balsamic vinegar. Drizzle this dressing over the salad and lightly toss to coat all the ingredients.
