Grilled Halloumi and Veggie Skewers

250g Halloumi cheese, cut into 1-inch cubes

1 medium zucchini, sliced into thick rounds

1 bell pepper (red, yellow, or green), cut into 1-inch squares

1 red onion, cut into wedges

1 cup cherry tomatoes

2 tablespoons olive oil

1 tablespoon balsamic vinegar

2 teaspoons dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley or basil, for garnish

Optional: Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before grilling)

Instructions
 

Prepare the Marinade: In a bowl, whisk together the olive oil, balsamic vinegar, dried oregano, garlic powder, salt, and pepper. This will be your marinade to flavor both the halloumi and the veggies.

    Marinate the Veggies: Place the zucchini, bell pepper, red onion, and cherry tomatoes in a large mixing bowl. Pour half of the marinade over the veggies and toss until they are well coated. Set aside to marinate for about 15-20 minutes.

      Prepare the Halloumi: In another bowl, add the halloumi cubes and drizzle with the remaining marinade. Gently toss to coat the cheese, then let it marinate for the same 15-20 minutes.

        Skewer the Ingredients: Take your skewers and start assembling. Alternate threading the marinated halloumi, zucchini, bell pepper, red onion, and cherry tomatoes onto the skewers. Be playful with the arrangement to create a colorful presentation!

          Preheat the Grill: Heat your grill over medium-high heat. If using an outdoor grill, ensure the grates are clean and oiled to prevent sticking.

            Grill the Skewers: Place the assembled skewers on the grill and cook for about 10-12 minutes, turning occasionally to get a nice char on all sides. The halloumi should be golden brown and slightly crispy on the outside.

              Serve and Garnish: Once cooked, remove the skewers from the grill and transfer to a serving plate. Sprinkle with fresh parsley or basil for an added burst of flavor and color.
