4 slices of rustic bread (sourdough or ciabatta work well)

1 cup fresh corn kernels (about 2 ears of corn)

1 cup ricotta cheese

2 tablespoons extra-virgin olive oil

2 tablespoons fresh basil, chopped

1 tablespoon fresh lemon juice

Zest of 1 lemon

Salt and black pepper to taste

Optional: Red pepper flakes for garnish

Prepare the Corn: Preheat your grill or grill pan over medium-high heat. If using fresh corn, husk the ears and remove the silk. Lightly brush the corn with a bit of olive oil and sprinkle with salt. Grill the corn for about 8-10 minutes, turning occasionally until lightly charred and cooked through. Remove from heat and let it cool slightly. Cut the kernels off the cob and set aside.

    Make the Ricotta Spread: In a mixing bowl, combine the ricotta cheese, 1 tablespoon of olive oil, chopped basil, lemon juice, lemon zest, salt, and black pepper. Mix until well blended and creamy. Adjust seasoning as desired.

      Toast the Bread: Brush each slice of rustic bread with the remaining olive oil on both sides. Place the slices on the grill and toast for about 2-3 minutes on each side or until golden brown with grill marks.
