Grilled Chicken with Mango Salsa

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons lime juice

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon chili powder

For the Mango Salsa:

1 ripe mango, diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeds removed and minced (optional for heat)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Prepare the Marinade: In a bowl, whisk together olive oil, lime juice, minced garlic, ground cumin, smoked paprika, salt, black pepper, and chili powder.

    Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes to 2 hours for maximum flavor.

      Prepare the Mango Salsa: In a medium bowl, combine the diced mango, red onion, red bell pepper, jalapeño (if using), and cilantro. Drizzle the lime juice over the top and season with salt and pepper to taste. Stir gently to combine and set aside.

        Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any leftover marinade. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
