4 large bone-in chicken thighs, skin-on

2 tablespoons olive oil

2 tablespoons fresh lemon juice

4 cloves garlic, minced

2 teaspoons fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, rosemary, thyme, smoked paprika, salt, black pepper, and lemon zest until well combined.

    Coat the Chicken: Add the chicken thighs to the bowl, making sure they are thoroughly coated in the marinade. Cover with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Preheat the Grill: Take the chicken out of the refrigerator and let it sit at room temperature for about 20 minutes. Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

        Grill the Chicken: Once the grill is hot, place the chicken thighs skin-side down on the grill. Cook for about 7-10 minutes until the skin is crispy and a nice golden color, then flip and reduce the grill heat to medium. Grill for another 10-12 minutes or until the internal temperature reaches 165°F (75°C).
