3 tablespoons olive oil

2 tablespoons fresh lime juice

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for extra heat)

For the Tacos:

8 small corn tortillas

1 cup diced fresh pineapple

1/2 red onion, finely chopped

1/2 cup fresh cilantro, chopped

1 avocado, sliced

Lime wedges for serving

Hot sauce (optional)

Instructions
 

Marinate the Chicken:

    - In a medium bowl, whisk together olive oil, lime juice, minced garlic, cumin, smoked paprika, chili powder, salt, black pepper, and cayenne pepper.

      - Add the chicken thighs to the marinade and coat them well. Cover and refrigerate for at least 30 minutes, but preferably up to 2 hours for maximum flavor.

        Preheat the Grill:

          - Preheat your grill to medium-high heat (about 400°F/200°C).

            Grill the Chicken:

              - Remove the chicken from the marinade and let any excess drip off.

                - Place the chicken on the preheated grill and cook for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

                  - Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing it into thin strips.

                    Warm the Tortillas:

                      - While the chicken is resting, warm the corn tortillas on the grill for about 30 seconds on each side until they are soft and pliable.

                        Assemble the Tacos:
