8 slices of sourdough bread

4 oz prosciutto, thinly sliced

4 oz salami, thinly sliced

4 oz smoked gouda cheese, grated

4 oz brie cheese, sliced

1 cup arugula or mixed greens

½ cup fig jam

¼ cup whole grain mustard

2 tbsp olive oil or unsalted butter

Salt and pepper to taste

Prep Your Ingredients: Gather all the ingredients. If you haven't done so, slice the brie and prepare the cheeses and meats, so they're ready to go.

    Assemble the First Layer: Take four slices of sourdough bread and spread a tablespoon of fig jam on each slice. On top of the jam, layer with prosciutto and salami evenly across the four slices.

      Add the Cheeses: Sprinkle the grated smoked gouda over the meats, and add slices of brie on top. Make sure to cover all the layers generously.

        Add Greens: Top the cheese with a handful of arugula or mixed greens. Season with a pinch of salt and pepper for extra flavor.

          Finish Layers: Spread whole grain mustard on the remaining four slices of sourdough bread. Close the sandwiches with these slices, mustard side down, pressing gently to secure everything together.

            Grill the Sandwiches: Heat a skillet or griddle over medium heat. Add olive oil or melt butter in the skillet. Once hot, place the sandwiches in the skillet. Cook for 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheeses are melting.

              Slice and Serve: Remove the sandwiches from the skillet, let cool for a minute, then slice them in half. Serve hot, optionally with additional fig jam or mustard for dipping.
