1 lb ground turkey

1 cup green chilies (canned or roasted, diced)

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder

1 tbsp olive oil

Salt and pepper to taste

8 large flour tortillas

Fresh cilantro, chopped (for garnish)

Sour cream or guacamole (for serving)

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent (about 3-4 minutes).

    Add Turkey and Spices: Turn the heat up to medium-high. Add the ground turkey to the skillet. Season with ground cumin, smoked paprika, chili powder, salt, and pepper. Cook until the turkey is browned and cooked through, breaking it apart with a spatula (about 5-7 minutes).

      Mix in Green Chilies: Stir in the diced green chilies and cook for an additional 2 minutes to combine flavors. Remove the skillet from heat and let the mixture cool slightly.
