1 lb ground turkey

1 can (4 oz) diced green chilies, drained

1 cup shredded Monterey Jack cheese

1/2 cup cream cheese, softened

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

8 slices of sourdough bread

Fresh cilantro, chopped (for garnish)

Jalapeño slices (optional, for extra heat)

Butter (for grilling)

Instructions
 

Prepare the Turkey Mix: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and sauté until translucent (about 3-4 minutes). Stir in the minced garlic, followed by the ground turkey. Cook until turkey is browned and cooked through, breaking it apart with a wooden spoon.

    Season and Combine: Once the turkey is cooked, stir in the drained green chilies, cumin, smoked paprika, salt, and pepper. Combine well. Remove the skillet from heat and let it cool slightly.

      Create the Cheese Mixture: In a mixing bowl, combine the softened cream cheese and shredded Monterey Jack cheese. Mix until fully blended.

        Assemble the Sandwiches: Take a slice of sourdough bread and spread a generous amount of the cheese mixture on one side. Top with a portion of the turkey mixture. If desired, add jalapeño slices for an extra kick, then top with another slice of bread.

          Grill the Sandwiches: In the same skillet, or another non-stick skillet over medium heat, add a little butter.
