Greek Yogurt Banana Oatmeal Muffins

Ingredients
  

1 cup rolled oats

1 cup mashed ripe bananas (about 2 medium bananas)

1/2 cup Greek yogurt (plain, unsweetened)

1/4 cup honey or maple syrup

1/4 cup milk (dairy or non-dairy)

2 large eggs

1/2 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup chopped nuts (walnuts or pecans) - optional

1/2 cup dark chocolate chips - optional

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    Prepare the Oats: In a medium bowl, combine the rolled oats with 1 cup of boiling water. Allow them to soak for about 10 minutes while you prepare the other ingredients.

      Mix Wet Ingredients: In a large mixing bowl, whisk together the mashed bananas, Greek yogurt, honey or maple syrup, milk, eggs, and vanilla extract until well combined.

        Combine Dry Ingredients: In another bowl, sift together the flour (if using), baking powder, baking soda, cinnamon, and salt.

          Combine Mixtures: Gradually integrate the dry mixture into the wet mixture, stirring gently just until combined. Do not overmix!

            Fold in Oats and Extras: Once the batter is ready, fold in the soaked oats, and if desired, add the nuts and chocolate chips into the batter.

              Fill Muffin Cups: Spoon the batter into each muffin cup, filling them about 2/3 of the way full.

                Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.

                  Cool and Serve: Remove muffins from the oven and let them cool in the muffin tin for about 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy your healthy and delicious muffins!
