Ingredients

2 cups of seedless watermelon, cut into 1-inch cubes

1 cup of feta cheese, crumbled

1/4 cup of fresh mint leaves, roughly chopped

2 tablespoons of extra virgin olive oil

1 tablespoon of balsamic glaze (optional)

Salt and freshly ground black pepper, to taste

12 small wooden skewers or toothpicks

Instructions

Prepare Ingredients: Start by cutting the watermelon into 1-inch cubes and crumbling the feta cheese into a bowl. Wash and chop the fresh mint leaves.

Assemble Skewers: Take a skewer and thread a watermelon cube, followed by a piece of feta cheese, and finally a mint leaf. Repeat until you fill the skewer, leaving some space at the ends for easy handling. Aim for about 2 cubes of watermelon and 2 pieces of feta per skewer.

Drizzle Olive Oil: Once all skewers are assembled, arrange them on a serving platter. Drizzle the extra virgin olive oil over the skewers for added flavor.

Season: Lightly season the skewers with salt and freshly ground black pepper to enhance the taste.

Add Balsamic Glaze: If desired, drizzle balsamic glaze over the top of the skewers for a sweet touch.

Serve: These skewers are best served immediately while fresh. You can chill them briefly in the refrigerator before serving if you prefer them cold.
