4 cups of fresh watermelon, cut into 1-inch cubes

1 cup of feta cheese, crumbled or cut into small cubes

1/4 cup of fresh mint leaves, chopped

1/4 cup of extra virgin olive oil

1 tablespoon of balsamic vinegar

Zest of 1 lemon

1/2 teaspoon of black pepper

Prepare the Ingredients: Start by cutting the watermelon into 1-inch cubes and the feta cheese into similar-sized cubes (or crumble the feta if you prefer).

    Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, lemon zest, and black pepper. This will be the dressing for the skewers.
