Greek Pasta Bake with Feta

12 oz (340g) penne pasta

2 tablespoons olive oil

1 onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1 cup spinach leaves

8 oz (225g) feta cheese, crumbled

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/2 cup pitted kalamata olives, halved

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté for 2-3 minutes until translucent. Stir in the red bell pepper and zucchini, cooking for an additional 5 minutes until softened.

        Add Tomatoes and Spices: Add the halved cherry tomatoes, oregano, basil, red pepper flakes (if using), salt, and pepper. Cook for another 2 minutes, then add the spinach, stirring until wilted.

          Combine Pasta and Cheese: In a large bowl, combine the cooked pasta, sautéed vegetable mixture, crumbled feta cheese, and ricotta cheese. Gently mix until everything is well incorporated.

            Layer and Bake: Transfer the pasta mixture into a greased 9x13 inch baking dish. Spread evenly and top with the grated Parmesan cheese and kalamata olives.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the top is golden and bubbly.

                Garnish and Serve: Remove from the oven and let it cool for 5 minutes. Garnish with fresh parsley before serving. Enjoy your Mediterranean pasta bake!
