Greek Chicken Gyro Bowls

For the Chicken Marinade:

2 lbs boneless, skinless chicken thighs

4 cloves garlic, minced

1 lemon, juiced

2 tbsp olive oil

2 tsp dried oregano

1 tsp paprika

1 tsp ground cumin

Salt and pepper, to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, grated and drained

2 cloves garlic, minced

1 tbsp olive oil

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tbsp lemon juice

Salt and pepper, to taste

For the Bowls:

2 cups cooked quinoa or rice (your choice)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1 cup feta cheese, crumbled

1/2 cup Kalamata olives, pitted and sliced

Fresh parsley or dill, for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine minced garlic, lemon juice, olive oil, oregano, paprika, cumin, salt, and pepper. Add chicken thighs, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, preferably up to 2 hours.

    Prepare the Tzatziki Sauce: In a medium bowl, combine Greek yogurt, grated cucumber (squeeze out excess moisture), minced garlic, olive oil, dill, lemon juice, salt, and pepper. Mix well and refrigerate until ready to use.

      Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove chicken from marinade and grill or cook in the skillet for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Let it rest for a few minutes before slicing.

        Assemble the Bowls: In serving bowls, layer cooked quinoa or rice as the base. Top with sliced chicken, cherry tomatoes, diced cucumbers, red onion, crumbled feta cheese, and Kalamata olives.

          Finish with Tzatziki: Drizzle a generous amount of tzatziki sauce over the top and garnish with fresh parsley or dill.
