Ingredients

1/2 cup extra virgin olive oil

1/4 cup balsamic vinegar (preferably aged for richness)

1 tablespoon Dijon mustard

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon minced garlic (freshly grated)

1/2 teaspoon sea salt (or to taste)

1/4 teaspoon freshly cracked black pepper

1 teaspoon fresh herbs (like basil or thyme, finely chopped - optional, but recommended)

Instructions

Prepare your ingredients: Start by measuring out all the ingredients. If you’re using fresh herbs, finely chop them and set aside.

Combine the liquids: In a medium-sized mixing bowl or a mason jar, pour the balsamic vinegar, Dijon mustard, and honey (or maple syrup). Whisk or shake well to combine until the mixture is smooth and slightly thickened.

Incorporate the garlic and seasonings: Add the minced garlic, sea salt, and black pepper to the vinegar mixture. Whisk again until everything is well blended.

Emulsify the vinaigrette: While continuously whisking (or if using a jar, by closing the lid tightly and shaking), slowly drizzle in the extra virgin olive oil. This will help to emulsify the ingredients, resulting in a creamy, well-combined vinaigrette.

Add herbs (optional): If you’ve chosen to use fresh herbs, fold them into the mixture now, distributing them evenly throughout the vinaigrette.

Taste and adjust: Dip a clean spoon into your vinaigrette and taste. You can adjust the sweetness with a little more honey, add more salt if needed, or increase the acidity with a splash more balsamic vinegar according to your preference.

Store or serve: If not using immediately, transfer the vinaigrette into a clean, airtight jar and store in the refrigerator. Shake well before using, as the ingredients may separate over time.
