4 large eggs

3 cups grated carrots (about 4 large carrots)

1 cup crushed pineapples, drained

1 cup chopped walnuts (or pecans, optional)

1 teaspoon vanilla extract

1/2 cup raisins (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

2 teaspoons vanilla extract

Zest of 1 lemon (for extra freshness, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk together until evenly mixed.

      Combine Wet Ingredients: In another bowl, whisk together the oil and sugar until well combined. Add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.

        Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.

          Add Carrots and Mix-Ins: Fold in the grated carrots, drained crushed pineapples, chopped nuts, and raisins (if using) into the batter. Ensure everything is evenly distributed.
