Golden Spiced Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust for spice level)

Salt and black pepper to taste

1 cup cooked quinoa

1/2 cup chopped fresh spinach

1/2 cup diced cucumber

1/4 cup diced red onion

1/4 cup chopped fresh parsley

4 whole grain or spinach wraps

1/2 cup hummus (store-bought or homemade)

1 lemon, cut into wedges (for garnish)

Instructions
 

Prepare the Chickpeas: In a medium bowl, mash chickpeas lightly using a fork or a potato masher. They should be slightly chunky for texture.

    Spice it Up: In a pan, heat olive oil over medium heat. Add the mashed chickpeas, ground cumin, ground coriander, turmeric powder, smoked paprika, cayenne pepper, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the chickpeas are heated through and fragrant.

      Mix the Filling: In a large bowl, combine the spiced chickpeas, cooked quinoa, chopped spinach, diced cucumber, diced red onion, and chopped parsley. Mix well until all ingredients are evenly distributed.

        Assemble the Wraps: Spread about 2 tablespoons of hummus onto each wrap. Place a generous portion of the chickpea filling in the center of each wrap, leaving some space at the edges for folding.

          Fold and Roll: Carefully fold the sides of the wrap inward and then roll it tightly from the bottom up. Slice the wraps in half diagonally for easy eating.
