Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for a kick)

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1/2 cup buttermilk

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped (for garnish)

2 tablespoons melted butter (for brushing)

Optional: extra cheese for sprinkling on top

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, and cayenne pepper until well combined.

Incorporate Butter: Add the cold, cubed butter into the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.

Add Cheese and Garlic: Fold the shredded cheddar cheese and minced garlic into the flour mixture, ensuring even distribution.

Combine Wet Ingredients: In a separate bowl, mix the buttermilk with a splash of vinegar or lemon juice if you don’t have buttermilk on hand. Allow it to sit for about 5 minutes to curdle slightly, then pour it into the flour mixture.

Form the Dough: Stir the mixture gently with a wooden spoon until just combined. Be careful not to overmix; the dough should be slightly sticky.

Shape the Biscuits: Turn the dough onto a floured surface. Pat it into a rectangle about 1-inch thick. Use a biscuit cutter or a sharp knife to cut out your biscuits, re-rolling scraps as needed.

Bake: Place the biscuits on the prepared baking sheet, ensuring they are touching slightly for soft edges. Bake in the preheated oven for 12-15 minutes or until golden brown on top.

Brush with Butter: In the last 2 minutes of baking, mix the melted butter with minced garlic if desired, and brush it over the biscuits for an extra layer of flavor. For more cheesy goodness, sprinkle a little extra cheddar on top before baking.

Garnish and Serve: Remove from the oven and let them cool for a few minutes. Brush with remaining melted butter, garnish with fresh parsley, and serve warm.
