1 lb boneless, skinless chicken thighs (or breasts)

1 cup uncooked jasmine rice

4 cups chicken broth

1 cup water

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 stalk celery, diced

1 tsp ground turmeric (for that golden color)

1 tsp ground cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

2 tbsp olive oil

1 cup frozen peas

1/4 cup fresh parsley, chopped (for garnish)

Juice of 1 lemon

Instructions
 

Prepare the Chicken: In a large pot, heat olive oil over medium heat. Season the chicken thighs with salt and pepper. Add them to the pot and sear until golden brown on both sides (about 5-7 minutes). Remove the chicken, set aside, and chop into bite-sized pieces once cool.

    Sauté the Vegetables: In the same pot, add the chopped onion, minced garlic, carrots, and celery. Sauté for about 5-6 minutes, until the vegetables are softened and fragrant.

      Spice It Up: Stir in the ground turmeric, cumin, and smoked paprika, cooking for an additional minute to release the spices' flavors.

        Add Broth and Rice: Pour in the chicken broth and water, and bring it to a gentle boil. Add the uncooked rice to the pot. Reduce heat and let simmer for 15 minutes, stirring occasionally.

          Incorporate Chicken and Peas: Once the rice is cooked, add the chopped chicken back to the pot along with the frozen peas. Cook for an additional 5 minutes until the chicken is heated through and the peas are warmed.
