1 cup all-purpose flour

1 cup cornmeal

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon cayenne pepper

1 cup buttermilk

1/4 cup vegetable oil

1 large egg

1 cup shredded sharp cheddar cheese

1/2 cup diced fresh jalapeños (seeds removed for less heat)

1/2 pound ground beef (or turkey)

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded lettuce

1/2 cup sliced tomatoes

1/4 cup mayonnaise

1 tablespoon hot sauce (optional)

Salt and pepper to taste

Butter (for toasting)

Prepare the Muffin Batter: In a large mixing bowl, combine the flour, cornmeal, baking powder, salt, and cayenne pepper. In another bowl, whisk together the buttermilk, vegetable oil, and egg. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the shredded cheddar cheese and diced jalapeños.

    Bake the Muffins: Preheat your oven to 400°F (200°C) and grease a muffin tin. Fill each muffin cup about two-thirds full with the batter. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool slightly before removing them from the tin.
