1 medium butternut squash, peeled, seeded, and cut into 1/2-inch cubes

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon ground cinnamon

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 sheet of store-bought puff pastry, thawed

4 ounces goat cheese, crumbled

1/4 cup grated Parmesan cheese

1 egg, beaten (for egg wash)

Fresh thyme sprigs (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Butternut Squash: On a baking sheet, toss the butternut squash cubes with olive oil, salt, black pepper, cinnamon, and thyme. Spread them out in a single layer. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized. Remove from the oven and let cool slightly.

      Prepare the Puff Pastry: While the squash is roasting, roll out the puff pastry on a lightly floured surface to a larger rectangle, about 1/8-inch thick. Cut the puff pastry into rounds (about 6-8 inches in diameter) or squares, depending on your preference.

        Assemble the Galettes: Place the puff pastry rounds on a baking sheet lined with parchment paper. Leaving a 1-inch border, sprinkle crumbled goat cheese and Parmesan in the center of each pastry. Spoon the roasted butternut squash evenly over the cheese.

          Fold the Edges: Gently fold the edges of the pastry over the filling, pleating as necessary to create a rustic edge. Be sure to leave the center exposed. Brush the edges with the beaten egg for a golden finish.

            Bake the Galettes: Bake the galettes in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffy.
