Ingredients

Dry Ingredients:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

2 tbsp poppy seeds

Wet Ingredients:

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

Zest of 1 large lemon

½ cup plain yogurt (or sour cream)

¼ cup fresh lemon juice (about 1 large lemon)

Lemon Glaze:

1 cup powdered sugar

2-3 tbsp fresh lemon juice

Zest of ½ lemon

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or grease it lightly.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and poppy seeds. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes).

Add Eggs and Flavorings: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.

Combine Wet Ingredients: Mix in the yogurt and fresh lemon juice until well combined.

Incorporate Dry Mix: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; some lumps are okay.

Fill Muffin Cups: Evenly distribute the batter into the prepared muffin pan, filling each cup about 2/3 full.

Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let them cool in the pan for about 5 minutes before transferring them to a wire rack.

Prepare the Lemon Glaze: In a small bowl, combine the powdered sugar and 2 tablespoons of lemon juice. Whisk until smooth. If it's too thick, add more lemon juice until you reach your desired consistency. Stir in the lemon zest.

Glaze the Muffins: Once the muffins are completely cool, drizzle the lemon glaze over each muffin. Allow the glaze to set for a few minutes before serving.

Enjoy your delightful Zesty Lemon Poppy Seed Muffins!
