Ingredients

4 medium zucchinis, spiralized into noodles

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), sliced thinly

1 cup baby spinach

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Lemon wedges, for serving

Instructions

Prepare Zucchini Noodles: Start by spiralizing your zucchinis using a spiralizer. If you don’t have one, you can use a vegetable peeler to create long, thin strips. Place the noodles on a clean kitchen towel to absorb excess moisture.

Heat the Oil: In a large skillet or wok, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.

Add Vegetables: Toss in the sliced bell pepper and cherry tomatoes. Sauté for about 3-4 minutes until the bell pepper is slightly softened but still crisp.

Incorporate Zucchini Noodles: Add the spiralized zucchini noodles into the skillet. Stir and cook for about 2-3 minutes, just until the noodles are tender but still al dente.

Add Spinach & Season: Stir in the baby spinach, red pepper flakes (if using), salt, and pepper. Cook for another minute until the spinach is wilted.

Finish with Cheese: Remove the skillet from heat and sprinkle the grated Parmesan cheese over the noodle stir fry, tossing gently to combine.

Serve: Plate your Garlic Parmesan Zucchini Noodle Stir Fry, garnishing it with fresh basil leaves. Serve with lemon wedges on the side for an extra zing.

Enjoy: Dig in while it's warm, savoring the blend of garlic and Parmesan goodness.
